

Who can resist a picture of lemons - they exude sunshine. The first sunny day in ages has inspired me to use up some of the fruit brought down by the high winds and rain. I decided to make Spiced Lemon Pickle from Eatability by Jocasta Innes. This is the first phase; lemons and onions marinading overnight in wine vinegar with spices.
The ingredients are:
2 lb lemons, squeezed and thinly sliced or chopped
1 lb onions, finely chopped
1 pint wine vinegar
1 1/2 lb granulated sugar
1 oz salt
2 oz green ginger
2 large fresh green chillies
1 tbsp whole allspice
1 dsp whole cardamon
1 dsp whole coriander
I will finish off with the method tomorrow.
